Beans with lemon and almonds

Transform green beans into a delicious side dish with only four ingredients.
Ingredients:
  • 1kg green beans
  • 1 lemon
  • 4 four tbsp of olive oil
  • slivered almonds, roasted, to serve
Instructions:
  • Prepare 1kg of fresh, tender green beans by trimming off the ends.
  • Quickly blanch the beans for 1-2 minutes, then cool them in cold water. Drain the beans and gently heat the juice from one lemon and four tablespoons of olive oil in a saucepan over low heat. Toss in the beans, ensuring they are well coated and heated through.
  • Drizzle with fragrant lemon oil and top with zest of lemon and roasted slivered almonds for a delightful presentation.
