Beans with hummus dressing and pine nuts

Elevate beans with gourmet hummus dressing and crispy pine nuts.
Ingredients:
  • 500g Italian flat beans, topped
  • 500g green beans, topped
  • 55g (1/3 cup) toasted pine nuts (Ducks brand), to serve
  • Sweet paprika, to serve
  • 1 x 300g can chickpeas, rinsed, drained
  • 1 small garlic clove
  • 125ml (1/2 cup) olive oil
  • 60ml (1/4 cup) fresh lemon juice
  • 40.00 gm hot water
  • Salt & freshly ground black pepper
Instructions:
  • Fill the sink halfway with cold water. Boil a large saucepan of water. Carefully blanch the flat beans for 30 seconds, then add the green beans and cook for an additional 1 1/2 minutes until vibrant green and tender-crisp.
  • Drain the beans in a colander set over a bowl, place the colander in cold water for 1-2 minutes until they cool. Pat dry with paper towel after draining well.
  • For the hummus dressing, add chickpeas and garlic to a food processor and blend until finely chopped. Mix oil and lemon juice in a jug. Slowly pour the oil mixture into the chickpea blend while processing, until smooth. Incorporate hot water and blend. Pour into a jug, season with salt and pepper to taste.
  • Drizzle the dressing over the beans and scatter the pine nuts and paprika on top.
