Beautiful bread sauce

Whip up this quick and easy homemade bread sauce - a must-try!
Ingredients:
  • 1 onion
  • 4 cloves
  • 2 fresh bay leaves
  • 1 whole nutmeg for grating
  • 700 ml whole milk
  • 2 loaves of ready-to-bake ciabatta
  • 30 g unsalted butter
  • 4 tablespoons double cream
Instructions:
  • Peel the onion and stud it with cloves, then place it in a saucepan along with bay leaves, milk, sea salt, black pepper, and nutmeg. Bring to a boil over high heat, then simmer gently for 5 minutes. Remove from heat and let it sit for 15 minutes. Prepare the breadcrumbs by removing crusts from ciabatta loaves, tearing 1½ loaves into chunks, and blitzing them in a food processor. Strain the milk into a jug, discard solids, and return milk to the pan. Bring back to a boil, then simmer over medium heat, gradually stirring in breadcrumbs until used up. Add butter, cream, and adjust seasoning if needed. Check the consistency of the sauce and adjust by adding more breadcrumbs if runny or more milk if thick. Serve immediately or adjust the consistency for later by adding more milk. If saving for later, allow the sauce to be slightly thinner, transfer to a bowl, cover with cling film, and refrigerate until ready to use.
