Indulge in a zesty lemon pound cake made with plant-based Becel® for a refreshing twist on a classic treat.
Ingredients:
  • 1 cup Becel® Salted Plant-Based Bricks
  • 1 cup white sugar
  • 4 large eggs
  • 1 tablespoon grated lemon peel
  • 0.5 teaspoon salt
  • 2 cups all-purpose flour
Instructions:
  • Preheat your oven to 350 degrees F (190 degrees C), then generously grease and flour a 9 x 5-in. (23 x 13 cm) loaf pan; set aside.
  • In a large bowl, use an electric mixer on high speed to beat the Becel® Salted Plant-Based Bricks with sugar until light and fluffy, which should take about 2 minutes. Add the eggs one at a time, making sure to beat well after each addition. Mix in the lemon peel and salt. Slowly add the flour on low speed and mix just until blended. Spoon the batter evenly into the prepared pan.
  • Bake for 1 hour, then cover with aluminum foil and bake for an extra 5 minutes until a toothpick inserted in the center comes out clean. Allow to cool on a wire rack for 15 minutes, then remove from the pan and let cool completely. Optionally, drizzle with lemon glaze as desired.
