Savor the simplicity of these savory beef, feta, and green onion rissoles for a satisfying weeknight dinner.
Ingredients:
  • 750g lean beef mince
  • 3 green onions, thinly sliced
  • 250.00 ml fresh white breadcrumbs
  • 2.50 gm ground cumin
  • 125.00 ml flat-leaf parsley leaves, finely chopped
  • 150g feta cheese, crumbled
  • olive oil cooking spray
  • 1 loaf Turkish bread, cut into 4 pieces, halved
  • 250.00 ml tabouli,
  • 125.00 ml Greek Style Yoghurt, to serve
Instructions:
  • In a large bowl, mix together mince, egg, onions, breadcrumbs, cumin, parsley, and feta. Season with pepper, and thoroughly combine the ingredients. Shape 16 rissoles by rolling 2 tablespoons of the mixture into balls, then slightly flatten them.
  • Preheat a greased barbecue plate over medium heat, then cook the rissoles, turning occasionally, until they are cooked through, about 12 to 15 minutes.
  • Lightly coat both sides of the bread with oil to enhance flavor and crispiness. Grill on the barbecue for 1 to 2 minutes per side until perfectly toasted. Transfer the bread to a plate and enjoy!
  • On serving plates, arrange bread, then add tabouli and rissoles on top. Serve with yoghurt and lemon wedges.
