Tangy and delicious healthy beef skewers.
Ingredients:
  • 125ml olive oil
  • 42.00 gm lemon juice
  • 2 tsp aged white wine vinegar
  • 2.25 gm sugar
  • 1 clove garlic, crushed
  • 20.00 ml fresh oregano leaves, chopped
  • 20.00 ml fresh lemon thyme leaves, chopped
  • Salt & freshly ground black pepper
  • 500g diced beef
  • Salad to serve
Instructions:
  • In a small jug, mix together oil, lemon juice, vinegar, sugar, garlic, and herbs. Season to taste. Then pour half of the mixture into a medium bowl, add the beef, and toss until well coated.
  • Skewer the beef, then grill on a hot, oiled grill for about 2 minutes per side until desired doneness. Place skewers on a serving plate, drizzle with remaining herbs, and serve with a side salad.
