Savor this versatile and delectable beef and pork stew, perfect on its own, paired with rice, pasta, or crispy chips.
Ingredients:
  • 6 pounds Bottom round beef roast
  • 3 pounds pork loin roast
  • 2 tablespoons Adobo Seasoning, divided, or to taste
  • 2 tablespoons ground cumin, divided, or to taste
  • 2 large Onions, chopped
  • 1 Head Garlic, minced
  • 2 Red Bell Peppers, chopped
  • 1 Orange (or Green) Bell Pepper, chopped
  • 1 Yellow Bell Pepper, chopped
  • 10 ounces Green Olives, chopped
  • 4 Cups Pickled Vegetables (Giardiniera), chopped
  • 1/4 cup Capers, chopped
  • 1/2 Cup Chopped Cilantro
  • 1/2 Cup Corn Oil
  • 1 Cup red wine
  • 1 Cup Chicken Broth
  • Salt to taste
Instructions:
  • Collect the ingredients.
  • Dice the beef and pork into small cubes; season generously with half of the adobo seasoning and cumin.
  • In a food processor, finely chop onions and garlic, and set aside. Next, finely chop red, orange, and yellow peppers, green olives, pickled vegetables, capers, and cilantro in batches if needed, and combine in a bowl.
  • In a large pot, heat oil over high heat. Add onions and garlic, cook for 5 minutes, stirring occasionally.
  • Combine vibrant red, orange, and yellow peppers with flavorful olives, tangy pickled vegetables, briny capers, and fresh cilantro in a sizzling pan. Cook for 5 minutes, gently stirring from time to time.
  • Pour the wine into the pot and simmer for 5 minutes, stirring occasionally. Mix in the beef and pork until well combined. Pour in the chicken broth, then season to taste with salt.
  • Bring the mixture to a vigorous boil, then lower the heat to medium-low. Cover and simmer for about 5 hours until significantly reduced, stirring occasionally. After 2 hours, adjust the seasoning by tasting and adding more cumin and adobo as desired.
