Beef and Pork Pelmeni (Russian Dumplings)

Make flavorful Russian pelmeni by stuffing dumpling skins with a blend of ground pork, beef, and onions.
Ingredients:
  • 2.6666667461395 cups all-purpose flour
  • 0.66666668653488 cup water
  • 1 pound ground pork
  • 1 pound ground beef
  • 0.5 cup water
  • 0.5 onion, finely chopped
  • salt and ground black pepper to taste
Instructions:
  • Combine flour and a teaspoon of salt in a bowl, stirring well.
  • Combine eggs and 2/3 cup water in a separate bowl. Add this mixture to the flour and mix until dough forms. Knead the dough on a floured surface until smooth for about 6 minutes. Transfer the dough to a plastic bag.
  • In a separate bowl, mix together the pork, beef, water, and onion, then season the filling with salt and pepper.
  • Transfer the dough back to the work surface and shape it into long snakes, each about 3/4-inch thick. Cut the snakes into 3/4-inch-wide segments, then flatten them into 2-inch circles using a rolling pin.
  • Spoon a generous 1-inch-wide scoop of the filling onto each dough circle. Fold the dough over the filling and pinch to seal. Bring together and pinch the two opposite corners behind the flat edge. Transfer the pelmeni to a floured baking sheet.
  • 1. Bring a pot of salted water to a boil. Drop in approximately 15 pelmeni and cook until they rise to the surface, typically 5 to 7 minutes.
