Beef and snow pea stir-fry with easy fried rice

Crunchy snow peas elevate Chinese stir-fry to new heights.
Ingredients:
  • 21.00 gm soy sauce
  • 76.25 gm Changs oyster sauce
  • 27.30 gm peanut oil
  • 750g beef rump steak, trimmed, thinly sliced
  • 1/2 medium brown onion, thinly sliced
  • 2cm piece fresh ginger, peeled, finely grated
  • 6 green onions, sliced
  • 250.00 ml shredded Chinese cabbage (wombok)
  • 150g snow peas, trimmed, halved
  • 1 quantity Easy fried rice, to serve (see related recipe)
Instructions:
  • In a small bowl, mix together soy sauce and oyster sauce. Heat a large wok over high heat until hot. Add 2 teaspoons of oil and swirl to coat the pan. Stir-fry beef in 3 batches for 2 to 3 minutes each, until just cooked through. Transfer beef to a bowl.
  • Pour the rest of the oil into the wok and swirl it around to coat the surface. Add the brown onion and stir-fry for about a minute until softened. Then, add the garlic and ginger and stir-fry for about 30 seconds until fragrant.
  • Add the beef and its flavorful juices back to the wok. Toss in green onion, cabbage, snow peas, and the soy sauce mixture. Stir-fry for 2 minutes until the veggies are tender and the sauce slightly thickens. Enjoy with a side of Easy Fried Rice.
