Savory beef and veggie pies with flaky filo dough for a healthier twist on a classic favorite.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, chopped
  • 1 garlic clove, crushed
  • 500g beef mince
  • 375.00 ml frozen mixed vegetables (see note)
  • 45.20 gm barbecue sauce
  • 44.40 gm tomato paste
  • 8 sheets filo pastry
  • Olive oil cooking spray
  • Salad, to serve
Instructions:
  • Preheat the oven to 180°C (160°C fan-forced) and generously grease a 12-hole muffin pan with 1/3 cup-capacity for easy removal of your delicious muffins.
  • 1. Heat oil in a frying pan over medium-high heat, then sauté onion and garlic for 3 minutes until softened. 2. Add mince and cook, breaking it up with a wooden spoon, for 8 minutes or until browned and cooked through. 3. Mix in vegetables, barbecue sauce, and tomato paste, then cook for 5 minutes until vegetables are tender. 4. Remove from heat and let it sit for 10 minutes before serving.
  • Take a sheet of filo and lay it on a flat surface. Spray it with oil. Add another sheet of filo on top. Repeat layering with a total of 3 sheets of filo. Cut the filo stack in half lengthwise, then cut each piece into thirds. Press each piece into 6 holes of the prepared pan, with some overhang. Repeat the process with the rest of the filo sheets.
  • Divide the mince mixture evenly among the pastry cases. Seal by folding the edges over the filling. Lightly spray with oil. Bake in the oven for 20 minutes or until golden and hot. Allow the pies to rest for 2 minutes before serving with a side of salad.
