Indulge in Curtis Stone's juicy beef burger with crispy buttermilk onion rings and flavorful bacon aioli.
Ingredients:
  • 200g sliced streaky bacon, finely diced
  • 300g mayonnaise
  • 185ml buttermilk
  • Canola oil, for deep-frying
  • 225g plain flour
  • 1 large brown onion, sliced into 3mm-thick rings, separated
  • 800g 3 Star beef mince
  • 4 hamburger rolls, toasted
  • 62.50 ml sliced pickled jalapeño chillies
  • 40g baby rocket leaves
Instructions:
  • For flavorful bacon aioli, crisp up the bacon in a large, heavy frying pan over medium-high heat for about 5 minutes. Once it's nice and crispy, transfer it to a paper towel-lined plate to cool. Mix the cooled bacon with mayonnaise, 2 teaspoons of buttermilk, and a pinch of salt and pepper in a medium bowl.
  • Prepare the buttermilk onion rings by heating oil in a large, heavy saucepan over medium-high heat until it reaches 175°C on a thermometer.
  • Prepare the buttermilk and flour in separate shallow bowls. Season the flour with 2 teaspoons salt and 1/4 teaspoons pepper. Coat the onion rings in the seasoned flour, then dip them in the buttermilk before coating them again in flour. Fry the onion rings in batches until golden and crispy, stirring constantly. Remove the rings from the oil and place them on a paper towel-lined baking tray. Season with salt while hot. Repeat with remaining onion rings.
  • Begin by preheating the barbecue to medium-high heat. Then, prepare a baking tray lined with baking paper. Shape the 200g beef mince into four patties and lay them on the tray. Gently press and mold the patties to be slightly bigger than the bun size. Finish by drizzling the patties with oil and generously seasoning them with salt and pepper.
  • Grill the patties, oiled-side down, until browned, about 4 minutes. Flip and grill for an additional 2-3 minutes for medium-rare (or 1-2 minutes longer each side for medium). Rest the patties for 3 minutes before serving.
  • Spread the flavorful aïoli on both the buns. Layer the beef patty, jalapeño slices, onion rings, and fresh rocket on the bun bottoms. Finally, top with the remaining buns and enjoy!
