Upgrade your classic grilled burger with crispy, golden buttermilk onion rings for extra flavor and crunch.
Ingredients:
  • 500g beef burger
  • 4 slices cheddar cheese
  • 4 Hamburger Rolls, split, toasted
  • Mayonnaise, to serve
  • Cos lettuce leaves, to serve
  • Sliced tomato, to serve
  • Sliced gherkins, to serve
  • 175g plain flour, sifted
  • 50g (1/4 cup) polenta
  • 20.00 ml chilli powder
  • 1 1⁄26.40 gm sea salt
  • 1L (4 cups) buttermilk
  • Vegetable oil, to deep-fry
  • 1 large sweet white onion, sliced into 1cm-thick rings
Instructions:
  • Generously oil a non-stick frying pan and bring to medium-high heat. Cook the patties, flipping occasionally, for 10-15 minutes or until fully cooked. Sprinkle cheese on top and cook for an additional minute until melted.
  • In a large bowl, mix together flour, polenta, chili powder, salt, and freshly ground black pepper for the onion rings. Create a well in the center and pour in the buttermilk. Whisk until fully combined.
  • Pour enough oil into a saucepan to reach halfway up the side. Heat over medium-high heat until the oil reaches 180C on a cook’s thermometer. Dip each onion ring into the buttermilk batter, ensuring they are evenly coated, and place them in the hot oil. Deep-fry for 2-3 minutes until they are crisp and golden. Drain on a paper towel-lined plate. Repeat with the rest of the onion rings and batter.
  • Spread mayonnaise on both the base and tops of the rolls. Layer lettuce, tomato, gherkin, meat patties, and onion rings on the bases, then cover with the roll tops.
