Grilled Meatloaf, Potato and Carrot Packs

Classic meatloaf with a side of vegetables - a comforting American meal in one convenient package.
Ingredients:
  • 1 1/2 pounds lean ground beef
  • 1 envelope (1.1 ounces) onion recipe and dip soup mix
  • 1 egg
  • 3/4 cup milk
  • 1/2 cup Progresso™ plain bread crumbs
  • 1/3 cup ketchup
  • 1 package (1 pound 4 ounces) refrigerated new potato wedges
  • 3 cups baby-cut carrots
  • Fresh parsley, if desired
Instructions:
  • Preheat grill for direct heat. Prepare six 18x10-inch pieces of heavy-duty aluminum foil by spraying them with cooking spray. In a bowl, combine beef, dry soup mix, egg, milk, and bread crumbs. Shape mixture into 6 loaves measuring 4x2 1/2x1 inch each. Place a loaf on one side of each foil piece and top with approximately 1 tablespoon of ketchup. Surround each loaf with 1/2 cup potatoes and 1/2 cup carrots.
  • Wrap the foil tightly over the loaf and vegetables, sealing the edges with a 1/2-inch fold, then fold again to ensure a secure seal. Leave room on the sides for air circulation and expansion.
  • Grill the packets over medium heat, rotating halfway through, for 25 to 30 minutes until veggies are tender and beef is cooked through. Then, place packets on plates, cut a large X on top of each, and garnish with parsley before serving.
