Beef burgers with double-fried chips

Ingredients:
  • 1kg desiree potatoes, peeled, cut into thick chips
  • 600g fatty beef mince
  • 20.00 ml fresh marjoram, chopped
  • 1 egg yolk
  • Peanut oil, to deep-fry
  • 100g cheddar, sliced
  • 4 brioche rolls, halved, toasted
  • Lettuce leaves, to serve
  • 2 cooked beetroot bulbs, sliced
  • 1 red onion, thinly sliced
  • 190g (3/4 cup) good-quality whole egg mayonnaise
  • 40g (1/4 cup) cornichons, rinsed, chopped
  • 20.00 ml capers, rinsed, chopped
  • 17.70 gm Dijon mustard
  • 20.00 ml Sriracha Hot Chilli Sauce
  • 10.60 gm lemon juice
Instructions:
  • Prepare your baking tray by greasing it lightly with oil. Boil the potato in a pot of salted water for 12 minutes or until tender and just starting to fall apart. Drain the potato and let it cool slightly. Place the potato on the greased tray and refrigerate for 1 hour to allow it to dry out.
  • Combine the beef, marjoram, and yolk in a bowl. Season well and use your hands to mix. Shape the mixture into 4 patties, cover, and chill in the fridge for 1 hour.
  • Combine all the sauce ingredients in a bowl, cover it, and let it chill in the fridge to enhance the flavors.
  • Fill a saucepan one-third full with peanut oil and heat to 160C. Fry the chips in 3 separate batches for 2-3 minutes each until they start to brown. Remove and drain on paper towel.
  • Heat olive oil in a spacious non-stick frying pan. Sear beef patties for 2 minutes on each side for medium doneness, or until cooked to your preference. Transfer to a baking tray. Preheat the grill on high. Place cheese on beef patties. Grill for 2 minutes or until cheese is melted. Cover loosely with foil and allow to rest.
  • Bring peanut oil to 170C. Fry the chips in 3 batches for 3-4 minutes each, until golden. Place on paper towel to drain and season generously with salt.
  • Assemble the burgers by layering lettuce, patties, spicy sauce, beetroot, and onion on the bottom buns. Add the top buns and serve with the chips and extra sauce on the side.
