Beef ravioli with zucchini and tomato and garlic sauce recipe

Mid-week comfort: Hearty and satisfying ravioli dish.
Ingredients:
  • 625g pack Latina™ Fresh Beef Ravioli
  • 2 zucchini, cut into bite-size chunks
  • 425g tub Latina™ Fresh Italian Tomato & Garlic Sauce
  • 120g baby spinach
  • Parmesan to serve
Instructions:
  • Boil our Cook Latina™ Fresh Beef Ravioli until tender, then simply drain.
  • Heat a splash of olive oil and butter in a large deep frying pan until sizzling. Sauté zucchini until golden, about 4-5 minutes. Add Latina™ Fresh Italian Tomato & Garlic Sauce and simmer for 3 minutes.
  • Combine the pasta and spinach with the sauce until well mixed. Serve sprinkled with Parmesan.
