Beef satay skewers with couscous

Whip up quick and delicious satay beef skewers with tomatoes and peppers in just 15 minutes!
Ingredients:
  • 500g diced beef rump steak (3cm cubes)
  • 250g cherry tomatoes
  • 1 yellow capsicum, cut into 3cm pieces
  • 250ml satay sauce
  • Olive oil spray
  • 200g (1 cup) wholemeal couscous
  • Coriander leaves, to serve
  • Baby salad leaves, to serve
Instructions:
  • Skewer the beef, tomatoes, and capsicum alternately on 8 metal or bamboo skewers, then season with sea salt and pepper.
  • Coat the skewers with half of the flavorful satay sauce, saving the rest to enjoy as a dipping sauce later.
  • Preheat a lightly oiled barbecue or char-grill pan over medium-high heat. Cook skewers for 8 to 10 minutes, turning regularly, until they are lightly charred and cooked through.
  • Prepare the couscous as directed on the package.
  • Drizzle the skewers with the remaining satay sauce and serve alongside couscous garnished with coriander and a side of baby salad leaves.
