Beef sausage and couscous salad

Ingredients:
  • 375g beef sausage
  • 250.00 ml couscous
  • 3 tsp Moroccan seasoning
  • 2 tsp finely grated lemon rind
  • 250.00 gm boiling water
  • 420g can chickpeas, drained, rinsed
  • 50g baby spinach
  • 4 green onions, thinly sliced
  • 65.63 gm lemon juice
  • 20.00 ml chopped fresh coriander leaves
Instructions:
  • Preheat a barbecue plate or chargrill over medium-high heat. Grill sausages, turning occasionally, for 10 to 12 minutes until fully cooked. Plate the sausages and slice thinly before serving.
  • In a large heatproof bowl, mix couscous, seasoning, and lemon rind. Pour in boiling water, cover, and let it stand for 5 minutes. Fluff the couscous with a fork. Add sausage, chickpeas, spinach, onion, lemon juice, and coriander to the couscous. Toss everything together. Divide the salad into 4 airtight containers and refrigerate.
