Create a flavorful sausage and couscous salad with just 6 simple ingredients!
Ingredients:
  • 9.20 gm vegetable oil
  • 230g beef sausage
  • 375.00 ml couscous
  • 100g snow peas, trimmed, thinly sliced diagonally
  • 250g cherry tomatoes, halved
  • 62.50 ml fresh basil leaves, torn
  • 66.25 gm balsamic salad dressing
Instructions:
  • In a large heavy-based frying pan over medium-high heat, heat oil. Cook sausages, turning occasionally, for 8 to 10 minutes until browned and fully cooked. Transfer to a cutting board and slice sausages diagonally into 1cm-thick pieces.
  • Pour boiling water over couscous in a large bowl. Cover and let sit for 5 minutes until water is absorbed. Fluff couscous with a fork to separate grains.
  • Combine sausage, snow pea, tomato, and basil with couscous. Season with salt and pepper, then toss together. Drizzle with dressing and serve.
