Prepare and marinate beef and veggies, then freeze for convenience. Thaw, skewer, and grill for a quick and tasty meal after work.
Ingredients:
  • 1 zucchini, cut into chunks
  • 1 red bell pepper, cut into 1 inch pieces
  • 1 (15 ounce) can pineapple chunks, drained
  • 0.5 cup ketchup
  • 2 tablespoons steak sauce (such as A1®)
  • 2 tablespoons white sugar
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons Worcestershire sauce
  • 0.25 cup water
  • 1.5 pounds beef sirloin, cut into 1 inch cubes
  • 12 bamboo skewers
Instructions:
  • Combine zucchini, bell pepper, and pineapple in a bowl. Drizzle with olive oil and mix well. Separate into freezer bags. In the same bowl, combine ketchup, salt, steak sauce, sugar, vinegar, Worcestershire sauce, and water. Stir until smooth. Add beef cubes and coat evenly. Divide beef into freezer bags, seal, and freeze.
  • Begin by removing the desired number of bags from the freezer and allow them to thaw in the refrigerator overnight or for at least 8 hours. Then, soak the skewers in warm water for a minimum of 30 minutes, or place them in water when you start thawing the meat and vegetable packets.
  • Preheat a medium-hot outdoor grill and lightly oil the grate. Assemble skewers by threading beef, vegetables, and pineapple alternately. Dispose of any leftover marinade.
  • Grill the skewers over high heat, flipping occasionally until cooked to your liking, approximately 10 minutes for medium-rare.
