Sizzle with tasty beef noodle stir-fry, ready in under 30 minutes.
Ingredients:
  • 270g soba noodles
  • 60ml oyster sauce
  • 40.00 ml mirin
  • 13.80 gm peanut oil
  • 600g beef rump steak, thickly sliced
  • 2 spring onions, thinly sliced
  • 1 large carrot, peeled, cut into matchsticks
  • 200g Swiss brown mushrooms, sliced
  • 2 garlic cloves, crushed
  • 1 bunch buk choy, trimmed, coarsely chopped
  • Sesame seeds, toasted, to serve
Instructions:
  • Cook the soba noodles according to the instructions on the packet. Rinse them under cold running water and make sure to drain them well.
  • In a small jug, mix oyster sauce, soy sauce, and mirin together. Set aside.
  • In a wok over medium-high heat, heat 1 teaspoon of oil. Stir-fry beef in batches for 2 minutes until browned. Transfer to a plate. Add the remaining oil to the wok and stir-fry spring onion, carrot, and mushroom for 3 minutes. Add garlic and bok choy, stir-fry for 1 minute. Return beef to the wok with the oyster sauce mixture and noodles. Stir-fry for 2 minutes. Divide into serving bowls and sprinkle with sesame seeds.
