Savory beef tips stew with rich gravy, served over creamy mashed potatoes alongside sweet corn.
Ingredients:
  • 1 tablespoon butter, or to taste
  • 1 pound beef stew meat, cut into 1/2 inch pieces
  • 2 (10.75 ounce) cans cream of mushroom soup
  • 2.5 cups milk
  • salt and ground black pepper to taste
  • 4 potatoes, peeled and cubed, or more to taste
  • 0.25 cup butter, or to taste
  • 0.25 cup milk, or to taste
  • 2 (15.25 ounce) cans whole kernel corn, drained
Instructions:
  • In a large skillet over medium heat, melt butter until sizzling. Sear beef in the fragrant butter, ensuring all sides are browned, for approximately 20 minutes. Add condensed soup, milk, salt, and pepper. Cover, lower the heat, and gently simmer until the stew thickens to a rich gravy, for at least an hour.
  • To make the mashed potatoes, boil cut potatoes in a large pot of water, then simmer until tender. Drain and blend in butter, milk, salt, and pepper using an electric mixer until smooth. Serve on a platter, cover to keep warm, and set aside.
  • Cook delicious corn: Simmer corn in a saucepan over medium heat until tender for approximately 15 minutes. Season generously with salt and pepper to enhance flavors.
  • Serve the beef stew over creamy mashed potatoes and accompany with a side of corn.
