Whip up quick, nutritious stir-fries by cooking veggies fast at high heat to retain nutrients.
Ingredients:
  • 36.40 gm peanut oil (see note)
  • 400g beef rump steak, thinly sliced
  • 68.75 gm sweet chilli sauce
  • 4.80 gm salt reduced soy sauce
  • 12.20 gm fish sauce
  • 1 onion, cut into wedges
  • 1 small red capsicum, sliced
  • 1 long red chilli, thinly sliced
  • 62.50 ml basil leaves
Instructions:
  • Heat half of the oil in a wok or large non-stick pan until sizzling.
  • Brown and partially cook the meat in batches by stir-frying.
  • Cover the dish with foil to keep warm.
  • Mix the sweet chilli sauce, soy sauce, and fish sauce together and let it sit.
  • Heat the rest of the oil, then stir-fry the onion and capsicum until just tender, about 2-3 minutes.
  • Stir in the red chili and cook for 1 minute.
  • Add the meat back to the pan, then pour in the sweet chili sauce mixture. Stir and cook for 1-2 minutes until the sauce is heated.
  • Take the pan off the heat, sprinkle in the fresh basil leaves, and serve right away.
