Sauté beet greens with bacon, garlic, onion, sugar, vinegar, and red pepper for a flavorful dish.
Ingredients:
  • 1 pound beet greens
  • 1 strip of thick cut bacon, chopped (or a tablespoon of bacon fat)
  • 1/4 cup chopped onion
  • 1 large garlic clove, minced
  • 3/4 cup of water
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon crushed red pepper flakes
  • 3 tablespooncider vinegar
Instructions:
  • Wash and chop the beet greens: Wash the beet greens in a sink of cold water, drain, rinse again, and then chop off any thick stems. Cut the leaves into bite-sized pieces and set aside.
  • Cook the bacon in a large skillet over medium heat until lightly browned (or heat 1 tablespoon of bacon fat). Add onions and cook for 5 to 7 minutes until softened and starting to brown. Stir in garlic and cook for an additional minute.
  • Pour water into the sizzling pan, stirring to release any flavorful bits stuck to the bottom. Mix in sugar and red pepper flakes, then bring everything to a boil.
  • Add the beet greens to the onion mixture, ensuring they are evenly coated. Cook on low heat, covered, for 5-15 minutes until the greens are tender. Mix in the vinegar. (For kale or collard greens, cook an additional 20 to 25 minutes until they reach the desired tenderness.)
