Bento Sushi-Rice Salad

Potluck-perfect cold rice salad mimics sushi restaurant rice without the roll.
Ingredients:
  • 1/2 cup uncooked regular long-grain white rice
  • 2 tablespoons unseasoned rice vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 teaspoon grated gingerroot
  • 1/4 cucumber, seeded, chopped
  • 1/4 cup shredded carrot
  • 1 green onion, sliced (1 tablespoon)
Instructions:
  • Prepare fluffy and perfectly cooked rice following the instructions on the package.
  • In a small bowl, combine vinegar, sugar, and salt. Stir until the sugar dissolves.
  • Combine the vinegar mixture with the remaining ingredients and fold them into the rice. Chill in the refrigerator for about 30 minutes until cold.
