Irresistible bar cookie with vanilla chips and your choice of berry jam.
Ingredients:
  • 0.5 cup butter
  • 1 cup vanilla baking chips
  • 2 eggs
  • 0.5 cup white sugar
  • 1 teaspoon almond extract
  • 1 cup all-purpose flour
  • 0.5 cup any flavor of berry jam
  • 0.25 cup sliced almonds
Instructions:
  • Preheat your oven to 325°F (165°C) and grease a 9x9 inch square baking pan. In a saucepan over medium heat, melt butter, then take it off the heat and gently add 1 cup of vanilla chips without stirring.
  • In a large bowl, whisk eggs until frothy. Slowly incorporate the sugar. Combine softened chocolate chips and butter, then fold into the egg mixture along with the almond extract. Mix the flour and salt; gently fold into the batter until just combined. Spread half of the batter into the prepared pan.
  • Bake in the preheated oven until golden brown, about 15 to 20 minutes. In a small saucepan over low heat, gently warm the jam to soften. Spread the jam over the warm crust, then mix in the remaining cup of vanilla chips to the batter. Place teaspoonfuls of the batter over the jam and top with almonds.
  • Bake for 30-35 more minutes in the preheated oven until a toothpick inserted in the center comes out clean. Let cool in the pan on a wire rack before cutting into bars.
