Berry and pistachio biscotti

Indulge in classic biscotti with your favorite coffee!
Ingredients:
  • 215.00 gm caster sugar
  • 2 eggs
  • 415.00 ml plain flour, sifted
  • 4.00 gm baking powder, sifted
  • 250.00 ml pistachio kernels
  • 125.00 ml dried berry mix, chopped (see tip)
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced and prepare 2 baking trays by greasing them and lining with baking paper.
  • In a large bowl, combine sugar and eggs, whisk together. Add flour, baking powder, pistachios, and berry mixture, stir well. Knead dough on a floured surface until smooth. Split dough in half; shape each into a 30cm log. Flatten slightly and place on prepared trays.
  • Bake until golden brown for 30 to 35 minutes. Let cool on trays for 20 minutes. Lower oven temperature to 140°C/120°C fan-forced. Slice logs diagonally into 5mm-thick slices using a serrated knife, discarding the ends.
  • Arrange slices in a single layer on 3 baking paper-lined trays. Bake for 20 minutes, flipping halfway through, until slices are dry and crisp. Let cool for 5 minutes before transferring to a wire rack to cool completely.
