Elevate classic lemon bars with blueberry layers and fluffy whipped cream.
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1/2 cup butter or margarine, softened
  • 1 egg
  • 2 cups fresh blueberries
  • 1/2 cup blueberry jam
  • 2 cups prepared lemon pie filling
  • 2 1/2 cups Cool Whip frozen whipped topping, thawed
Instructions:
  • Preheat oven to 375°F. Grease a 13x9-inch pan with cooking spray. Combine cookie mix, butter, and egg in a large bowl until a soft dough forms. Set aside 1/3 cup of the dough. Press the rest of the dough into the pan. Bake for 15-18 minutes until golden brown. Allow to cool fully for about 30 minutes.
  • Shape the remaining cookie dough into 5 balls and place them on an ungreased cookie sheet. Bake for 8 to 9 minutes until lightly golden brown. Allow to cool for 2 minutes before transferring to a wire rack. Cool completely for about 15 minutes.
  • Combine blueberries and jam in a small bowl and spread over the cookie crust. Carefully add lemon pie filling on top of the blueberry layer, followed by whipped topping. Sprinkle crumbled cookies over the whipped topping. Refrigerate for at least 2 hours until chilled. Cut into squares and store covered in the refrigerator.
