Indulge in irresistible homemade berry muffins with a delectable crunchy streusel topping.
Ingredients:
  • 1/4 cup Gold Medal™ all-purpose flour
  • 2 tablespoons packed brown sugar
  • 2 tablespoons butter or margarine, softened
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup butter or margarine, melted
  • 3/4 cup milk
  • 1/2 teaspoon vanilla
  • 1 egg
  • 2 cups Gold Medal™ all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup fresh or frozen blueberries
  • 1/2 cup fresh or frozen raspberries
Instructions:
  • Preheat your oven to 400°F and prepare your muffin pans by greasing the bottoms only for regular, mini, or jumbo muffins, or line them with paper baking cups.
  • Combine all Streusel Topping ingredients in a small bowl and mix with a fork until crumbly; set aside.
  • In a large bowl, combine 1/2 cup of butter, milk, vanilla, and egg, mixing until well combined. Add 2 cups of flour, granulated sugar, baking powder, salt, and 1/4 teaspoon of cinnamon, stirring until just moistened. Gently mix in berries. Distribute the batter evenly into muffin cups and top with the crumb topping.
  • Bake standard muffins for 25 to 30 minutes, mini muffins for 10 to 17 minutes, or jumbo muffins for 30 to 35 minutes until golden brown. Allow to cool for 5 minutes, then remove from pan onto a wire rack. Serve while warm.
