Put a twist on a traditional dessert by swapping pineapple for luscious berries.
Ingredients:
  • 1/3 cup butter or margarine
  • 1/2 cup sugar
  • 1 bag (12 oz) frozen mixed berries (blackberries, strawberries, blueberries and raspberries), thawed, drained
  • 1 1/3 cups Gold Medal™ all-purpose flour
  • 1 cup sugar
  • 2/3 cup milk
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 1 egg
Instructions:
  • Preheat oven to 350°F. Melt butter in a 9-inch square pan or 10-inch ovenproof skillet for about 2 minutes. Evenly sprinkle 1/2 cup sugar over the melted butter, then layer berries on top.
  • In a medium bowl, use an electric mixer on low speed to beat the remaining ingredients for 30 seconds. Increase speed to medium and beat for 2 minutes, scraping the bowl occasionally. Pour the batter over the berries.
  • Bake for approximately 50 minutes, or until a toothpick inserted in the center comes out clean. Invert a heatproof serving plate over the pan or skillet immediately after removing it from the oven. Let it stand for about a minute for the sugar mixture to drizzle over the cake, then remove the pan. Serve the cake warm and store it loosely covered.
