Impress your guests with this quick and easy pancake tray bake - fluffy and perfect for breakfast, brunch, or dessert in just 35 minutes!
Ingredients:
  • 500.00 ml plain flour
  • 70.95 gm caster sugar
  • 1.25 gm bicarbonate of soda
  • 390.00 gm buttermilk
  • 8.80 gm vanilla extract
  • 50g butter, melted
  • 125g raspberries
  • 250g strawberries, hulled, sliced
  • 125g blueberries
  • Icing sugar mixture, to serve
  • Whipped cream, to serve
  • Golden syrup, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced. Grease and line a 24.5cm x 37.5cm baking tray with baking paper, leaving a 2cm overhang on two sides.
  • Combine flour, sugar, bicarbonate of soda, and a pinch of salt in a large bowl. Create a well in the center. In a separate large jug, whisk together buttermilk, egg, and vanilla. Pour the buttermilk mixture into the well and whisk until just combined.
  • Prepare a baking tray by brushing half of the melted butter onto the baking paper. Spread the batter in the tray and smooth the top. Place half of the berries on top, gently pressing them into the batter. Drizzle the remaining butter all over. Bake for 10 minutes or until a skewer inserted in the center comes out clean.
  • Preheat the grill until sizzling hot. Grill the pancake for 1 to 2 minutes until beautifully golden. Allow it to cool for 1 minute before enjoying.
  • Sprinkle pancake with powdered sugar, add a dollop of cream, scatter the remaining berries on top, and finish with a drizzle of golden syrup. Enjoy your delicious pancakes!
