Weekend perfection: Buttermilk pancakes.
Ingredients:
  • 250g self-raising flour
  • 1 egg
  • 375ml buttermilk
  • 200g frozen mixed berries
  • 250ml maple syrup
  • 1 vanilla bean, split
  • Mixed berries, extra, to serve
Instructions:
  • In a large bowl, create a well in the center of the flour. Add the egg and buttermilk, then mix until fully combined. Let the mixture rest for 30 minutes.
  • In a large non-stick frying pan over medium heat, melt half of the butter. Pour 1/4 cup (60ml) of pancake mixture into the pan and add a sprinkle of mixed berries. Cook until bubbles appear on the surface and pancakes are golden underneath, approximately 1 minute. Flip and cook for another minute until golden. Transfer to a plate, cover with foil, and repeat with the remaining batter and mixed berries, remembering to grease the pan between each batch.
  • In a small saucepan, combine maple syrup, scraped vanilla seeds, and the vanilla bean. Cook over low heat, stirring, for 2 minutes until warmed through.
  • Serve pancakes on plates, generously sprinkle extra berries on top, drizzle with maple syrup, and enjoy immediately.
