Indulge in delectable Mixed-berry Pancakes for a delightful brunch.
Ingredients:
  • 300.00 gm self-raising flour, sifted
  • 53.75 gm caster sugar
  • 4 eggwhites
  • 257.50 gm reduced-fat milk
  • 82.50 ml no-added-sugar vanilla yoghurt
  • 250g mixed berries
  • Canola oil cooking spray
  • 168.75 gm maple syrup
Instructions:
  • In a large bowl, combine flour and sugar. In a separate bowl, whisk together egg whites, milk, and yogurt. Create a well in the center of the flour mixture and pour in the egg white mixture. Stir until almost smooth. Let rest for 10 minutes.
  • Gently mix in 1 cup of berries into the batter. Lightly coat a non-stick frying pan with oil and heat over medium-low heat. Spoon 2 tablespoons of batter for each pancake, cooking 4 pancakes for 2 minutes until bubbles form. Flip and cook for another 1 to 2 minutes until golden and cooked. Move to a plate and cover to keep warm. Repeat with the rest of the batter.
  • Plate the pancakes evenly among individual plates. Sprinkle the remaining berries over the pancakes. Drizzle with maple syrup and serve.
