Wholesome pancakes ready in just 20 minutes - perfect for a satisfying breakfast!
Ingredients:
  • 1 1/4 cups frozen unsweetened mixed berries (from 14-oz bag)
  • 1/2 cup blueberry syrup
  • 3/4 cup quick-cooking oats
  • 1 tablespoon packed brown sugar
  • 1 cup fat-free (skim) milk
  • 1/2 teaspoon vanilla
  • 1 egg
  • 1 cup reduced-fat all-purpose baking mix
Instructions:
  • In a 2-quart saucepan, heat topping ingredients over medium heat, stirring occasionally, until berries thaw and mixture is warm. Remove from heat and set aside.
  • Combine oats, brown sugar, milk, and vanilla in a medium bowl; let the flavors meld together.
  • In a large nonstick skillet or griddle, heat over medium-high heat or to 375°F. Combine egg and baking mix with oat mixture; stir until just moistened.
  • Pour a generous amount of 1/4 cup of batter onto a sizzling skillet for each pancake. Cook for 1 to 1 1/2 minutes until bubbles appear. Flip and cook for an additional 1 minute until golden brown. Enjoy your pancakes with your desired topping.
