Oatmeal muffins: wholesome and easy to make with oats, milk, and egg. Perfect for breakfast or a quick snack.
Ingredients:
  • 1 cup milk
  • 1 cup quick cooking oats
  • 1 egg
  • 0.25 cup vegetable oil
  • 1 cup all-purpose flour
  • 0.25 cup white sugar
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) while preparing a muffin tin with either greased cups or paper liners.
  • In a small bowl, mix together the milk and oats; allow them to soak for 15 minutes.
  • In a large bowl, whisk together egg and oil, then fold in the oats. In a separate bowl, sift together flour, sugar, baking powder, and salt. Gently combine flour mixture with wet ingredients until just mixed. Fill prepared muffin cups 2/3 full with batter.
  • Bake in the oven until a toothpick inserted into the center of a muffin comes out clean, about 20-25 minutes.
