Impress guests with our quick and delicious Berry Cobbler made with juicy summer berries. Perfect with ice cream or whipped cream!
Ingredients:
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 4 cups raspberries or blueberries
  • 2 tablespoons water
  • 1 teaspoon lemon juice
  • 1 cup Bisquick™ Original Pancake & Baking Mix
  • 1/4 cup milk
  • 1 tablespoon sugar
  • 1 tablespoon butter, melted
  • Vanilla ice cream or whipped cream, if desired
Instructions:
  • Preheat oven to 425°F.
  • Combine sugar and cornstarch in a 2-quart saucepan, then mix in raspberries, water, and lemon juice.
  • Bring the mixture to a boil over medium heat, stirring constantly. Boil for an additional minute, continuing to stir constantly.
  • Transfer the berry mixture into a 8-inch (2-quart) glass baking dish or pan.
  • Combine Bisquick™ mix, milk, 1 tablespoon of sugar, and melted butter in a medium bowl until a dough forms, stirring until just blended.
  • Spoon 6 dollops of dough onto the hot berry mixture.
  • Bake for around 15 minutes, or until the berry mixture is bubbling and the topping is golden brown.
  • Place the baking dish on a wire rack to cool briefly before serving warm with a scoop of ice cream on top.
