Berry cobbler bars: all the classic flavors in a portable cookie form. Irresistible!
Ingredients:
  • 1 pouch (17.5 oz) Betty Crocker™ Sugar Cookie Mix
  • 1 cup cold butter, cut into cubes
  • 1 egg
  • 1 pint blueberries
  • 1 pint raspberries
  • 1 cup blackberries
  • 1/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 2 to 3 tablespoons milk
Instructions:
  • Preheat the oven to 350°F and prepare a 9-inch square pan by lining it with cooking parchment paper.
  • Place the cookie mix in a medium bowl. Use a pastry blender or two knives to cut in the butter until the mixture resembles small peas. Add the egg and mix until combined. The dough will be crumbly. Press half of the mixture into the pan.
  • Combine blueberries, raspberries, blackberries, granulated sugar, and cornstarch in a bowl. Spread over the sugar cookie mixture, then sprinkle the remaining dough on top of the fruit mixture.
  • Bake for 35 to 40 minutes until the topping is golden and the fruit filling is bubbly. Allow to cool completely for about 1 hour.
  • Whisk icing ingredients in a small bowl, adding milk gradually until you achieve a thick yet pourable glaze. Drizzle over cooled bars and allow to set for 20 minutes before cutting into 16 equal squares.
