Elevate your jelly with fresh berries, a touch of sherry, and a decadent dollop of cream.
Ingredients:
  • 1 x 85g pkt strawberry or raspberry jelly crystals
  • 325ml boiling water
  • 60ml (1/4 cup) cold water
  • 60ml (1/4 cup) sweet sherry
  • 8 strawberries, washed, hulled, thinly sliced
  • 75g (1/2 cup) frozen blueberries
  • Whipped cream, to serve
Instructions:
  • Combine jelly crystals in a medium heatproof bowl with boiling water, stirring until dissolved. Mix in cold water and sherry until well combined.
  • Distribute the strawberries and blueberries evenly among four 125ml (1/2-cup) glasses. Pour the jelly mixture over the fruits. Chill in the fridge for 1 hour until set. Serve with a dollop of cream.
