Delicious cakey cookies loaded with raisins, walnuts, fruit puree, and rolled oats.
Ingredients:
  • 2 cups brown sugar
  • 2.5 cups rolled oats
  • 4 cups all-purpose flour
  • 1 tablespoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1.5 teaspoons ground cinnamon
  • 0.25 cup canola oil
  • 0.5 cup prune puree
  • 2 tablespoons water
  • 5 egg whites
  • 1.5 teaspoons vanilla extract
  • 0.75 cup raisins
  • 0.25 cup chopped walnuts
  • 0.33333334326744 cup chopped dried apricots
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and prepare your cookie sheets by greasing them or lining them with parchment paper.
  • Combine brown sugar, oats, flour, baking soda, baking powder, salt, and cinnamon in a large bowl. Create a well in the center and add canola oil, prune puree, water, egg whites, and vanilla. Mix until fully combined. Fold in raisins, walnuts, and apricots. Use an ice cream scoop to portion dough onto baking sheets, spacing them 2 inches apart. Flatten to 1/2 inch thickness with damp hands. Note: Cookies will maintain their shape during baking.
  • Bake in preheated oven for 8 minutes for chewy cookies and 10-12 minutes for dry cookies. Cookies will remain soft. Transfer to wire racks to cool.
