Bacon and green onion stovetop beans with limas, a crowd-pleasing potluck favorite.
Ingredients:
  • 2 pounds thick-cut bacon, cut into 1/2-inch pieces
  • 0.25 cup water
  • 3 bunches green onions, diced
  • 1 (16 ounce) package golden brown sugar
  • 1 (12 ounce) bottle tomato-based chili sauce (such as Heinz®)
  • 3 (15 ounce) cans pork and beans in tomato sauce (such as VanCamp's®)
  • 3 (15 ounce) cans kidney beans, drained
  • 3 (15 ounce) cans lima beans, drained
Instructions:
  • Cook the bacon in a Dutch oven over medium-high heat until slightly crispy, about 5 to 6 minutes. Remove the bacon from the pan and drain on paper towels; save 3 tablespoons of bacon grease and discard the rest.
  • Pour a quarter cup of water into the pan and bring it to a boil, making sure to scrape up all the delicious browned bits until the water evaporates. Next, add the reserved bacon grease and toss in the green onions. Cook until softened for 3 to 4 minutes. Sprinkle brown sugar gradually, around a quarter cup at a time, cooking until the sugar starts to caramelize, for about 5 minutes.
  • Add the chili sauce to the pot and let it cook for 2 to 3 minutes. Combine the pork and beans, kidney beans, and lima beans, stirring until the beans are evenly coated with the sauce.
  • Stir in the bacon, cover, reduce heat to low, and simmer for 1 1/2 to 2 hours, stirring occasionally to blend flavors and prevent burning.
