Irresistible date-filled oat bars with a hint of sweetness, less sugar but full of flavor.
Ingredients:
  • 4 cups chopped pitted honey dates
  • 0.75 cup orange juice
  • 0.5 teaspoon lemon juice
  • 2 cups whole wheat flour
  • 2 cups quick-cooking oats
  • 0.75 cup brown sugar
  • 0.5 teaspoon baking powder
  • 1.5 cups unsalted butter, melted and cooled
Instructions:
  • Preheat your oven to a toasty 325 degrees F (165 degrees C), then generously grease a 9x11-inch baking pan and line it with parchment paper.
  • In a large saucepan, gently simmer dates, orange juice, and lemon juice until dates are soft, approximately 6 minutes, stirring frequently.
  • Combine whole wheat flour, oats, brown sugar, baking powder, baking soda, salt, and melted butter in a large bowl. Press half of the oat mixture evenly into the prepared pan.
  • Evenly layer the date mixture over the oats, then sprinkle the remaining oat mixture on top and gently press down.
  • Place in the preheated oven until golden for approximately 20 minutes. Let it cool in the pan until reaching room temperature, which should take around 30 minutes. Chill in the refrigerator before cutting into squares, approximately 1 hour.
