Moist and delicious banana bread made with ripe bananas and dairy-free spread for a twist on a classic recipe.
Ingredients:
  • 1 teaspoon dairy-free spread (such as Country Crock)
  • 3 large ripe bananas, mashed (about 1 1/2 cups)
  • 1 cup dairy-free spread (such as Country Crock)
  • 0.75 cup firmly packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and generously grease a 9x5-inch loaf pan with 1 teaspoon of dairy-free spread.
  • In a large bowl, combine mashed bananas, 1 cup dairy-free spread, brown sugar, eggs, and vanilla using a wooden spoon until fully mixed. Add flour, baking soda, cinnamon, and salt and stir until well incorporated. Transfer the mixture into the prepared pan.
  • Bake at the set temperature until a toothpick inserted in the center comes out clean, for 60-70 minutes. Allow it to cool in the pan for 20 minutes, then transfer to a wire rack to cool completely.
