Quick and easy crab cakes made with crabmeat, crackers, lemon juice, and fried till golden, crispy, and delicious in butter.
Ingredients:
  • 1 egg
  • 3 tablespoons mayonnaise
  • 1 tablespoon minced green onions
  • 4 teaspoons lemon juice
  • 1 teaspoon dried tarragon
  • 0.125 teaspoon red pepper flakes
  • 8 ounces crabmeat
  • 0.5 cup crushed buttery round crackers
Instructions:
  • In a medium bowl, combine egg, mayonnaise, green onions, lemon juice, tarragon, and pepper flakes. Carefully fold in crabmeat to keep it intact. Slowly incorporate cracker crumbs until desired consistency is reached. Shape mixture into 4 patties.
  • Melt butter in a skillet over medium heat.
  • Sear patties in the skillet until beautifully golden, about 5 to 6 minutes per side.
