Savory meatloaf packed with beef, pork, zucchini, and melty cheese.
Ingredients:
  • 50g breadcrumbs
  • 400g beef mince
  • 300g pork mince
  • 1 zucchini, grated
  • 1 carrot, grated
  • 1 egg, lightly beaten
  • 1 clove garlic, crushed
  • 45.20 gm barbecue sauce
  • 41.60 gm tomato sauce
  • salt and cracked black pepper
  • 1 vine-ripened tomato, sliced
  • 40g cheddar cheese
  • steamed vegetables, to serve
Instructions:
  • Preheat oven to 200°C. Combine breadcrumbs, mince, zucchini, carrot, egg, garlic, sauces, salt, and pepper in a large bowl. Mix thoroughly.
  • Spread the mince mixture in a lightly greased 10cm x 20cm (1.5L) loaf pan. Bake for 25 minutes. Layer with sliced tomato and cheese, then bake for another 15 minutes. Serve alongside steamed vegetables.
