Best Ever New Zealand Pavlova

Popular pavlova with crispy meringue, soft inside, whipped cream, and fresh fruit topping.
Ingredients:
  • 3 egg whites
  • 1.25 cups white sugar
  • 2 tablespoons water
  • 3 teaspoons cornstarch
  • 0.5 teaspoon vanilla extract
  • 1 teaspoon distilled white vinegar
  • 0.125 teaspoon salt
Instructions:
  • Preheat the oven to 275 degrees F (135 degrees C). Grease a cookie sheet, line it with parchment paper, and lightly moisten the paper with water.
  • In a spacious glass or metal bowl, whip egg whites until foamy. Slowly incorporate sugar, beating until stiff peaks form. Add water, followed by mixing in cornstarch, vanilla, vinegar, and salt.
  • Spread the entire meringue mixture onto the center of the pan, allowing the Pavlova to naturally expand as it bakes.
  • Once the pavlova has baked in the preheated oven for 45 minutes, let it cool in the turned-off oven. Invert it onto a plate and garnish with fresh fruit and whipped cream.
