Ingredients:
  • 20ml oil
  • 1 large onion, diced
  • 8 rashers bacon, diced
  • 1 tsp garlic
  • 1kg peeled pumpkin, cut into chunks
  • 1 tsp vegetable stock powder
Instructions:
  • In a pan, heat oil and sauté onion, bacon, and garlic until onion is tender and cooked but not browned.
  • Coat the pumpkin with the bacon mix, then cover it with water. Sprinkle stock powder over the water and simmer gently until the pumpkin is tender.
  • Let the soup cool, then blend until smooth.
  • Warm up the soup and serve it alongside butter and freshly baked bread rolls.
