Light and fluffy matzo balls made with eggs, olive oil, matzo meal, and club soda for perfect soup accompaniment.
Ingredients:
  • 4 eggs
  • 6 tablespoons olive oil
  • 0.33333334326744 cup club soda
  • 2 tablespoons club soda
  • 0.5 teaspoon salt
  • 1.5 cups matzo meal, or more as needed
  • 4 quarts water
Instructions:
  • Combine eggs and olive oil in a bowl and whisk until well mixed. Stir in club soda and salt. Add matzo meal to form a dough, adding an extra 1/4 cup if needed. Cover and refrigerate for 30 minutes.
  • Start by bringing a large pot of water to a boil. Wet your hands and shape the matzo ball dough into walnut-sized balls. Carefully drop the matzo balls into the boiling water. Decrease the heat to low, cover the pot, and let the matzo balls simmer until tender, about 25 to 30 minutes.
