Spice up your potatoes with irresistible Indian flavors for everyone to savor.
Ingredients:
  • 4 large potatoes, peeled and cubed
  • 1.5 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 2 green chile peppers, chopped
  • 1 (1 inch) piece fresh ginger root, finely chopped
  • 1 teaspoon chili powder
  • 1 teaspoon coriander, ground
  • 1 teaspoon amchoor (dried mango powder)
  • 1 bunch fresh cilantro, chopped
Instructions:
  • Add the potatoes to a saucepan and cover with water. Boil until tender, about 10 minutes. Drain and let cool slightly.
  • In a large skillet over medium heat, warm the ghee until shimmering. Toast the cumin seeds briefly in the ghee until fragrant. Add the green chile peppers and ginger, then sprinkle in the chili powder and coriander. Toss in the potatoes and cook for about 5 minutes. Season with amchoor and salt, and cook for another 15 minutes. Finish it off with a sprinkle of fresh cilantro before serving.
