Best-ever sweet potato mash

Create a decadent sweet potato mash to elevate your winter feast.
Ingredients:
  • 6 small Gold sweet potatoes
  • 40g butter, chopped
  • 80ml cream
  • 2 tsp thyme leaves, plus extra to serve
  • 27.00 gm maple syrup, plus extra to serve
  • 20g butter, extra, melted
Instructions:
  • Preheat the oven to 200C. Pierce sweet potatoes all over with a fork, wrap each in foil, and place on a baking tray. Bake for 1 hour or until tender. Let them cool for 15 minutes, then carefully unwrap the foil, cut in half, and scoop out the flesh into a large bowl, discarding the skin.
  • Combine butter, cream, and thyme in a microwave-safe jug. Heat on high for 1 minute until butter has melted. Pour over sweet potato, then add maple syrup and mash until smooth. Season to taste and serve the mash topped with a drizzle of extra butter.
