Festive Christmas cookies with perfect texture and shape. Decorate with colored sugar before baking or frosting after cooling.
Ingredients:
  • 3.75 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1.5 cups white sugar
  • 1 cup margarine, softened
  • 2 teaspoons vanilla extract
Instructions:
  • Prepare all your ingredients before you begin.
  • Combine flour, baking powder, and salt in a medium bowl, gently sifting them together; then set aside.
  • Using an electric mixer, whip the sugar and margarine in a large bowl until creamy. Cover the dough with plastic wrap and let it chill in the refrigerator for 2 hours.
  • Incorporate the first egg into the butter mixture, followed by the second egg and vanilla extract. Mix in the flour mixture until the dough comes together.
  • Cover the dough with plastic wrap and refrigerate for 2 hours.
  • Preheat the oven to 400°F (200°C) and lightly grease two cookie sheets.
  • On a lightly floured surface, gently roll the dough to 1/4-inch thickness. Use cookie cutters to create shapes and place them on the baking sheets. Re-roll any scraps and continue cutting out shapes until all dough is used.
  • Bake in the preheated oven until edges turn golden, typically 6 to 8 minutes. Let cool on the baking sheet briefly, then transfer to a wire rack to cool completely.
