Irresistibly soft homemade cinnamon rolls with luscious cream cheese frosting. Easy make-ahead dough for a bakery-style treat at home.
Ingredients:
  • For the dough:
  • 1 cup whole milk
  • 2 teaspoons active dry yeast
  • 1/4 cup sugar
  • 2 large eggs
  • 4 cups all-purpose flour
  • 1 1/2 teaspoons kosher salt
  • 6 tablespoons room temperature unsalted butter, very soft
  • For the filling:
  • 1/2 cup room temperature unsalted butter
  • 3/4 cup brown sugar
  • 1 tablespoons ground cinnamon
  • 1/4 teaspoon kosher salt (or slightly less table salt)
  • For the frosting:
  • 4 ounces cream cheese, softened at room temperature
  • 4 tablespoons unsalted butter, softened at room temperature
  • 1 to 4 tablespoons milk, whole or 2%
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla extract
  • Pinch of kosher salt
Instructions:
  • Prepare the dough: Microwave the milk for 15 to 30 seconds until slightly warm. In a stand mixer bowl with a dough hook, combine the warm milk, yeast, and sugar. Let it sit until foamy for about five minutes. Add eggs, flour, and salt, mix on medium speed until sticky dough forms. Gradually beat in butter, 2 tablespoons at a time, ensuring each batch is fully incorporated before adding more. Butter should be very soft for easy incorporation; knead pieces in your fingers if needed. Once all butter is added, knead the dough for 10 minutes on medium speed or by hand.
  • Overnight rise: Shape the dough into a ball, place it in a large, lightly oiled bowl, cover with plastic wrap, and refrigerate for at least 8 hours. The dough will double in size gradually.
  • Prepare the rolls: Begin by taking the dough out of the refrigerator in the morning until it softens. On a floured surface, roll out the dough into a 12x16-inch rectangle. Spread butter over the dough, leaving a 1-inch border. Mix brown sugar, cinnamon, and salt, then sprinkle the mixture evenly over the butter. Roll the dough tightly from the edge with butter all the way to form a spiral. Pinch to seal. Trim the ends, then cut the roll into 8 equal pieces. Transfer the rolls to a greased 9x13-inch baking dish.
  • Place a snug layer of plastic wrap over the rolls and allow them to rise in a cozy spot for 30 to 90 minutes. The rolls should look plump and airy, nestled closely together with minimal gaps.
  • Preheat the oven to 350°F when the rolls have puffed up halfway.
  • Bake the rolls until they turn golden on top and puff up, usually around 20 to 25 minutes. Let them cool on a rack for 5 minutes before adding frosting.
  • Prepare the frosting while the rolls bake by combining cream cheese and butter in a hand mixer or stand mixer until creamy. Mix in half of the powdered sugar and 1 tablespoon of milk. Beat for 1 minute. Add the rest of the sugar and vanilla, beat for another minute. Adjust consistency by adding milk, 1 tablespoon at a time, until desired spreadable consistency is achieved.
  • Enjoy while fresh: generously frost the warm cinnamon rolls, then serve promptly.
